1 cup of organic high premium extra virgin olive oil Ladi Biosas Lemon
3 cloves garlic
pinch of oregano
250gr feta cheese
sea salt (fleur de sel)
fresh ground pepper
We cut the eggplants and place them in a baking tray. We drizzle with 1/2 cup of organic high premium extra virgin olive oil Ladi Biosas Lemon and bake at 180ο C until they soften.
We mix the chopped tomatoes, parsley and garlic and the rest of the olive oil in a small bowl.
When the eggplants are ready (40′), we cover each one of them with the mix.
We chop the feta cheese and place them on the eggplants.
We put them in the oven (160 οC) for 30 minutes.
