Balantinos Traditional Gruyere (graviera) is produced with fresh sheep’s and goat’s milk which is daily collected in the massif of Chania and Rethymno.
Balantinos family traditional recipe, which has been kept unchanged for four generations now, continues to place our Gruyere on top of your preferences and has recently brought in the golden prize of taste all over Greece.
Cretan graviera is a hard cheese which requires 3 months of ripening before it is disposed for consumption. It has 38% maximum moisture, 40% minimum fat content in dry environment and 2% maximum salt content. It is an exquisite table cheese with a pleasant sweetish taste and a rich flavor.
