Welcome to Standard Microbrewery of Thessaloniki.
Everything is possible as long as you believe. This is our philosophy and with this thought we started a few years ago to brew as home brewers.

We are George, Aggelos and George. In 2010 we started as a group home brewers. The only we had in our hands, was our taste, sufficient knowledge on how to make our own pure beer and above all, desire to experiment in new beer recipes.

Driven by passion and love, and in compliance with all standards, we decided to create our own microbrewery.
The Standard Microbrewery of Thessaloniki.

Five years later, we declare with pride that we succeeded. Now as a microbrewery, we made our love, our passion, our madness… profession.
We managed to give the possibility to everyone to try a fresh beer. A beer unpasteurized and unfiltered. A beer with rich aromas and flavors.

We gathered a night in order to find this name. Tasting beer trying to inspire something really special. We didn’t found the name. But we became… SKNIPA (a Greek expression for being drunk).

SKNIPA. The name may seem strange, perhaps makes people laugh. But it is not accidental. We do what we like, without the worry of general acceptance, even in the name or the sketch of the beer label. We wanted to get away from the trivial.
That is also the reason we brew. We want to offer a special beer at all levels. A true beer. SKNIPA.

Facilities

Our facilities are located just outside of Thessaloniki, in the area of ​​Thermi, at the 17th km of provincial road Thessaloniki – Polygyros.

In a well designed space, built for a single purpose. The proper functioning of a well-equipped brewery. In the 400 square meters, there are all the necessary equipment so as to produce daily, the SKNIPA beer.

Everything within the area, have been built according to the self-control system HACCP.

Among other things, however, our brewery is visitable. This means that upon request, all you can visit our brewery and you can tour the production site of SKNIPA beer. In the world of fresh beer.

Production procedure

Premixing
Milled malt on entry of the container ekchylisis- pulping (mashtun), mixed with hot water in a brewing special proanameiktira which allows homogeneous wetting and emulsifying it.

Extraction – Mash
Depending on the degree of modification of the malt and the type of beer to produce the malt mash temperature rises gradually, in order to activate specific enzymes to achieve the breakdown of carbohydrates and peptides in forms of sugars and proteins.

Wort filter
After completion of the extraction and transfer of the components of the malt in wort, followed by separation, carried out in the vessel filtering (lauter tun) is then transferred to a kettle (kettle wort).

Boiling wort – Hop add
The boiling of the wort ensure sterilization, and thus prevents the transfer of contamination from malt. When the boiling is the addition of lykiskou. Alcoholic fermentation

Standardization
Standardization is the process of transferring the beer from the storage tanks into bottles or drums in order to be marketed.
